Sodium bisulphite is a chemical product also known as sodium acid sulphite, monosodium salt of sulphurous acid. Sodium bisulphite is a reducing agent and has many applications: from the reduction of chlorine in photography, to the removal of dissolved oxygen in water transport systems. It also has many uses as a preservative thanks to its reducing capacity, being used in the preservation of onions, wine, fruit juices and bread products.
